Maltese Brewing Co Makes Guinness Tilt for World’s Spiciest Beer
The Maltese Brewing Co’s Signal One Challenge v2.0 is aiming for the Guinness World Record for spiciest beer.
The 6.5% ABV India Pale Ale is aged with 2 pounds of Carolina Reaper chiles per barrel, and despite its pineapple origins, is not for the faint of heart.
Ray Parish, co-owner of Maltese Brewing Co and a former physics major at Mary Washington University in Virginia, reached out to his alma mater to help gauge the spiciness of his brew.

According to this fascinating story from MWU, Parrish linked up with Professor Sarah Smith and junior biochemistry major Valerie Ebenki to analyze his chili beer against the Scoville Heat Index, which measures chili hotness.
The Carolina Reaper Pepper used to make Signal One Challenge v2.0 is the hottest in the world. Parish estimates the beer could be 70% spicier than the original Signal One brew.
Smith and Ebenki are determining the concentration of capsaicin, the chemical responsible for making peppers spicy. The researchers will submit their findings to Guinness in mid-March but will have to wait several months for the results.
One thing also in Parrish’s favor, the Guinness World Records does not have a current benchmark for World’s Spiciest Beer, so he could be on to a winner!
